I have been 80% dairy free for about a year now, and what a difference it has made for me. My exception when it comes to dairy is yogurt. Gluten Free, Vegetarian
2 large tomatoes (diced)
1 cup diced mushrooms
1 cup chopped green onions
1 cup chopped laminate kale stems (use only the stems)
1 cup fresh corn
1/2 cup quinoa veggie curls pasta (found at Whole Foods)
4 cups chopped spinach
1/4 cup olive oil
1tbsp salt, 1 tsp black pepper
1.In a small pan add the tomatoes with 1 cup of water and bring to a boil. Cook for 10 minutes
2. add the kale stems, the pasta, the spices, and the corn. Cook for 8 minutes
3. add the spinach, bring to a boil and directly tun off the heat
